SINGER JI METHAI
Sindhi Special Dessert Recipe: Sindhi Singer Methai
Sindhi Singer Methai, also known simply as Singer Methai or Sindhi Sweet, is a delightful traditional dessert from Sindhi cuisine. It’s a rich and aromatic sweet treat made primarily from milk, sugar, and various spices. This dessert is beloved for its creamy texture, rich flavor, and the touch of saffron that adds a distinctive aroma.

Here’s a step-by-step recipe to make this delicious Sindhi dessert:
Ingredients
- Milk: 1 liter (full cream or whole milk is preferred for a richer texture)
- Sugar: 1 cup (adjust to taste)
- Rice: 1/4 cup (washed and soaked for about 30 minutes)
- Cardamom Pods: 4-5, crushed
- Saffron Strands: A pinch (soaked in 2 tablespoons of warm milk)
- Chopped Nuts: 2 tablespoons (such as almonds, cashews, and pistachios)
- Ghee: 2 tablespoons (clarified butter)
- Rose Water: 1 teaspoon (optional, for added fragrance)
- Chopped Dried Fruits: 2 tablespoons (like dates or raisins, optional)
- Pinch of Salt
Instructions
- Prepare the Rice: Start by washing the rice thoroughly and soaking it in water for about 30 minutes. Drain and set aside.
- Cook the Rice: In a large, heavy-bottomed pan, heat the ghee over medium heat. Add the soaked rice and sauté for 2-3 minutes until it turns slightly golden.
- Add Milk: Pour in the milk and bring it to a boil. Once it starts boiling, reduce the heat to low and let it simmer. Stir occasionally to prevent the milk from sticking to the bottom of the pan.
- Add Sugar and Cardamom: When the rice is almost cooked (about 15-20 minutes), add the sugar, crushed cardamom pods, and a pinch of salt. Stir well and let it simmer until the rice is completely cooked and the milk has reduced to a creamy consistency.
- Incorporate Saffron: Stir in the saffron-soaked milk and let it simmer for another 5 minutes. The saffron will infuse the dish with its distinctive aroma and golden color.
- Add Nuts and Dried Fruits: Add the chopped nuts and dried fruits (if using). Stir well and cook for an additional 5 minutes.
- Finish with Rose Water: If you’re using rose water, add it to the pan and give it a final stir.
- Cool and Serve: Remove the pan from heat and let the Singer Methai cool slightly. It can be served warm or at room temperature. Garnish with extra nuts if desired.
Tips
- Adjust Sweetness: Depending on your preference, you can adjust the amount of sugar.
- Consistency: The dessert should be creamy and slightly thickened but not overly thick. It will continue to thicken as it cools.
- Nuts and Dried Fruits: Feel free to customize the nuts and dried fruits according to your preference or availability.
